Crockpot Pasta Fagioli
2 lbs ground beef
1 small onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounces) cans diced tomatoes, undrained
1 (16 ounces) can red kidney beans, drained
1 (16 ounces) can white kidney beans, drained
3 (10 ounces) cans beef stock
3 teaspoons oregano
1 teaspoons pepper
4 teaspoons parsley
1/2 teaspoon Tabasco sauce (optional)
1 (20 ounces) Jar spaghetti sauce
8 ounces pasta
Brown ground beef in a skillet and drain.
Add ground beef and remaining ingredients (except pasta) to crock pot.
Cook on LOW 7-8 hours or HIGH 4-5 hours
Add pasta during the last 30 minutes if cooking on HIGH or during last hour on LOW.
