Fiesta Sausage and Rice

2 pounds spicy Italian sausage, casing removed
1 teaspoon vegetable oil
2 cloves garlic, minced
2 teaspoons ground cumin
3 onions, chopped
3 green bell peppers, chopped
2 or 3 jalapeno peppers, seeded and minced
4 cups beef broth
2 (6 1/4 ounce) packages long grain and wild rice mix

In large skillet over medium-high heat, brown sausage in vegetable oil. Stir to separate meat. Add garlic and cumin; stir and cook for 30 seconds. Add onions, bell peppers and jalapeno peppers. Cover and cook until onions are tender.

Place mixture in slow cooker and stir in beef broth and rice.

Cover and cook on LOW 4 to 6 hours or on HIGH 1 to 2 hours.

Makes 10 to 12 servings.
