2 pounds lean beef chili meat
1 large onion, finely chopped
1 (10 ounce) can chopped tomatoes and green chilies
2 1/2 cups tomato juice
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon minced garlic
1 (15 ounce) can pinto or kidney beans
In large slow cooker, combine chili meat, onion, tomatoes and green chilies, tomato juice, chili powder, cumin, garlic and 1 cup water and mix well.
Cover and cook on LOW for 7 to 9 hours.
Add pinto or kidney beans and continue to cook additional 30 minutes.
Serves 4 to 6.
