Mediterranean Slow Cooker Gumbo

1 pound medium shrimp, peeled
1 medium onion, chopped
1/2 medium green bell pepper, chopped
2 cloves garlic, minced
1 (14 1/2 ounce) can whole tomatoes, undrained and coarsely chopped
2 (14 1/2 ounce) cans reduced-sodium chicken broth
1 (8 ounce) can tomato sauce
1 (2 1/2 ounces) jar sliced mushrooms
1/4 cup ripe olives, sliced
1/2 cup orange juice
2 bay leaves
1 teaspoon dried basil leaves
1/4 teaspoon fennel seed, crushed
1/8 teaspoon black pepper

Place all ingredients except shrimp in slow cooker.

Cover and cook on LOW 4 to 4 1/2 hours.

Stir in shrimp. Cover and cook 20 to 30 minutes or until shrimp are opaque. Remove and discard bay leaves.

Makes 6 servings.
