Parsley Potatoes

2 pounds small new potatoes, unpeeled, quartered
1/4 cup vegetable oil
1 (1.3 ounce) packet ranch dressing mix
1/4 cup fresh chopped parsley

Place potatoes, vegetable oil, dressing mix and 1/4 cup water in 4 to 5-quart slow cooker. Toss to coat potatoes.

Cover and cook on LOW for 3 to 4 hours or until potatoes are tender.

When ready to serve, sprinkle parsley over potatoes and toss.
