Slow Cooker Hoppin’ John

3 (15 ounce) cans black-eyed peas with liquid
1 onion, chopped
1 (6.2 ounce) package parmesan-butter rice
2 cups cooked, chopped ham
2 tablespoons butter, melted

In slow cooker, combine black-eyed peas, onion, rice, ham, butter and 1 3/4 cups water. Mix well.

Cover and cook on LOW for 2 to 4 hours.

Serves 6 to 8.
