1 1/2 cups white rice
1 (10 ounce) can diced tomatoes and green chilies
1 (15 ounce) can stewed tomatoes
1 (1 ounce) packet taco seasoning
1 large onion, chopped
In 5-quart slow cooker, combine all ingredients plus 2 cups water and stir well.
Cover and cook on LOW for 5 to 7 hours. The flavor will mix better with the rice if you stir 2 or 3 times during cooking time.
* Make this a main dish by adding 1 pound polish sausage to rice mixture.*
